Season as desired. Heat 1 Tbsp of oil in a large skillet over medium-high heat. Brown meat for 2 min/sid.e Wipe oil from skillet. Add 1/2 cup beef broth, water, or other liquids. Add chopped vegetables, if desired. Cover tightly. Simmer gently over low heat for 45 minutes or until tender. Add liquid if needed. Thicken pan juices for gravy.
