Arrange charcoal in half of the grill and heat for 30 minutes or heat one side of a gas grill for 10 minutes with lid closed. Season or marinate as desired. Sear meat over heat for 2 min/side, then move to cool side. Cook for 20-30 min with the lid closed. Keep air temp in the chamber at 350-375 degrees F. OPTIONS: Braise, Stew, Slow Roast, or Baste after 15 minutes. Remove when 150 degrees F internal temperature is reached.
